In her 50 updated, simple, and classic recipes, many major cuisines are represented: Mexican (sheet-pan fajitas), Italian (simple chicken scallopine), and just plain American (pot pie made using leftover chicken). The bonuses here are handfuls of marinades, butters, and brines; instructions for safe handling and tools to use; and cook's notes incorporated into every recipe, such as using an oven rack or making sure to apply a dry (or wet, depending) brine. Color photographs throughout guide the use of these recipes, enabling anyone to produce a chicken-perfect meal. Includes reference for metric conversions.
